Hand selected & hand picked from Merindoc Vintners in Heathcote. 100% whole bunch pressed to stainless, 24hr natural settling before racked off gross lees to neutral French barrels. Indigenous wild ferment in barrel then topped once finished & checked regularly for desired malo levels. 5 months maturation on ferment lees to build complexity and mouth feel.
