2022 'Silverfox' Syrah

95% Shiraz / 5% Viognier

This is one sly fox;

The fruit of Mobo’s 2nd vintage, our 2022 'Silverfox' Syrah does not muck around; Think musk of lavender, apricot blossom & cloves, wrapped around a sweetly scented core of strawberries, blueberries, & dark chocolate. Effortlessly grounded by a lick of wet stone, a lively pop of acid & soft powdery tannins.

Hand picked from Black Wallaby Vineyard in Bendigo. 50% tipped direct to SS 1t fermenter & sealed with dry ice for 5 weeks indigenous carbonic ferment with no touch, the remaining 50% de-stemmed to tub with 15% whole bunch & foot stomped daily with wild ferment. Both parcels combined after 1 month and left on skins for another 4 weeks. Pressed to neutral french oak puncheon / hogs heads, topped once per week, 10 months maturing in barrel. Unfined & unfiltered, minimal sulphur at bottling to keep him cellar friendly, no other adds. 5% Viognier added for complexity, vegan friendly.

VERDICT:

Not his first rodeo… Still one handsome devil.
