Our little darling Bonnie;
The golden child. 100% machine picked early from Whistling Eagle Vineyard in Heathcote. 24 hours of cold soaking before 33 days on skins fermenting by indigenous yeast. Softly plunged once per day for the first 10 days before being sealed to finish fermentation by carbonic maceration. Pressed to old french oak for 6 months maturation on heavy lees with minimal intervention.
VERDICT: Business in the front, party out the back.
